Remove uses of Mockito from the Auto project. Mockito 5 no longer supports Java 8 and we still do. While we could pin Auto to an older version, our uses of Mockito are pretty trivial. It's just two tests, and it's only interfaces that are mocked. So we can use some home-made [dynamic proxies](https://docs.oracle.com/javase/8/docs/api/java/lang/reflect/Proxy.html) instead.
